Meal-wise, it was one of those days when I just didn't feel like cooking up a storm. Instead, I wanted to complete a little casual cardio, do a little leisurely grocery shopping and just watch movies in the house for the rest of the day - and that's exactly what I did.
Thankfully, with a Keto diet, there are so many delicious things you can whip together that take no effort or time at all! Check out some of my quick concoctions for the day:
I started my day today with a Keto mini-loaf and I ate the whole thing. All I did was mix together the following ingredients, pour it into an oiled mini-loaf pan and then I put it in the oven for 30 mins (at approx. 250 degrees Celsius) - or until golden brown and no longer soft in the center. I also like to let the batter sit for about 5 mins before cooking it.
- 4 egg whites
- 1 whole egg
- 1/4 cup + 1tbsp ground flax
- 1 tsp of Vanilla Essence
- 1 tsp of Baking Powder
I like to eat my loaf with a little bit of stevia sprinkled on it. It's delicious! Note: just be cautious of the amount of flax. I'm used to it, but some people may find that it is a shock to their digestive system.
Ok, maybe not a recipe, but it's just so simple and perfectly Keto. Plus, it's so incredibly easy just to throw two whole chickens in the oven and roast them while you're watching a movie. It also gives me many great meals for the week!
If you want to jazz up your roast, sprinkle it with jerk seasoning or curry powder - these flavours really amp up the meat! As for the nuts, try lightly pan-roasting them on the stove with spices of your choice. It's so simple, but oh so delicious!
Note: if you want to eat the skin, either forgo the nuts or decrease the qty of nuts.
My snacks today were just protein shakes, but for one of them I also added a delicious cucumber, onion salad. Just toss together all of the ingredients below and you're good to go! It's fresh, crunchy and satisfying!
- Half a medium cucumber, diced (with seeds removed)
- A quarter or more of a small raw onion, diced
- 1 tbsp raw Coconut Oil (I used homemade)
- 1 tbsp or more of white vinegar
- Sea salt to taste
I'm still in the process of making dinner as I write this, but it's going to take me no time at all.
Here's the plan: All I'm going to do is cook up some lean ground beef with green peppers, taco seasoning and a tiny bit of tomato sauce. Then I'm going to make huge bowls of salad with lettuce, cucumber, onion and avocado; top it with the meat and then crown it with a dollop of plain yogurt. I might even put a big of cheese on top.
Tada! Again, crazy simple, fast and very filling! Not to mention, it's Keto friendly!
